OUR STORY

A Life in the Kitchen

The story of Chef Anderson and Paella de Cebu

Every good dish has a story, Chef Anderson's began long before the first pan of Paella de Cebu was ever served.

Over the years, I've learned that good food takes patience, care, and a willingness to keep learning. But what makes it truly special is seeing people come together to enjoy it. That's what Paella de Cebu is all about.

CHEF ANDERSON | Founder & Chef of Paella de Cebu

  • 01Where It All Began

More than twenty years ago, fresh out of college with a degree in Hotel & Restaurant Management, Anderson entered the food industry through a pizza restaurant. He became a dough master.

It wasn't glamorous side of the culinary world, but it was good training. Working with dough taught him that small details mattered and consistency required discipline

His curiosity soon took him further. Early in his career, he also underwent training in the science of gastronomy, learning more about what happens to ingredients when they're prepared, combined, and cooked. It gave him a deeper understanding of food -- both as a craft and a science.
  • 02Learning the Business of Food

Eventually, Anderson wanted to try something of his own. He ventured into running a food cart and later a cafe.

It was his first real introduction to the other side of the food business -- where knowing how to cook was only half the job. There were suppliers to deal with, ingredients to purchase, expenses to watch, and customers to keep happy.

These early ventures gave him something valuable: the perspective of both a cook and a business owner.
  • 03A Kitchen Far from Home

His career eventually took him to Singapore, where he worked as a sous chef.

Being part of an international kitchen meant adjusting to a different environment, working with people from different backgrounds, and taking on greater responsibility.

There was much to learn, not only about food but about the people and systems that make a kitchen work.
  • 04The Cuisine That Made Him Curious

When Anderson returned to Cebu, he found himself drawn to Spanish cuisine. Over time, he took on the role of Head Chef at a Spanish restaurant.

The more he worked with Spanish dishes, the more curious he became about their origins -- and the surprising ways they connected with Filipino culture. The shared history between Spain and the Philippines, with all its complexeties, had left lasting influences in our languages, traditions, and food.

Among the dishes he came to know; paella particularly captured his interest. A single pan, carefully chosen ingredients, a well-developed stock, and the patience to let everything come together. It was a dish that rewarded attention and respect for the process -- and one that was meant to be shared.
  • 05From a Passion to Something of His Own

After years of preparing food in other people's kitchens, Anderson began thinking about what it would mean to create something that was truly his.

That idea became Paella de Cebu

It brought together everything that had led him there -- the discipline of his early days as a dough master, his understanding of ingredients and techniques, the lessons of running a food cart and a cafe, the experience gained from Singapore, and years spent exploring Spanish cuisine.

The idea was straightforward: prepare good paella, cook it with care, and make it available for people to enjoy at their own gatherings. Birthdays, family reunions, Sunday lunches, and other special occassions -- moments where good food brings people together.
  • 06A New Chapter in Manila

Today, Paella de Cebu has found a new home in Metro Manila.

The setting may have changed, but much of Anderson's work remains familiar -- ingredients to prepare, stocks to make, pans to watch, and customers counting on him to deliver a good meal.

From his early days working with dough to the kitchens of Singapore, from discovering Spanish cuisine to building Paella de Cebu, his journey has never followed a perfectly straight line.

Every experience has contributed something to the chef he is today.

And the story continues, one paella pan at a time
